Dehydrated Yuzu Leaves

Hand peeled from spray-free yuzu, grown in our Wairarapa orchard.

Tastes like Intensely citrus and aromatic, closer to the smell of a yuzu than its taste, with a background note that's slightly herbal and green. A little bruising or tearing releases the oils and brings the fragrance right up.

The Details

A handful of dehydrated yuzu peel, hand-prepared and slowly dried to hold onto its scent. The peel is where yuzu keeps most of its magic, intensely fragrant, sharp and floral and drying it concentrates that aroma into something a little goes a long way with. One ingredient, nothing added. Store in a cool, dry place and it'll keep for months.

Things to Do

Steep whole in hot water for a fragrant citrus tea, or drop into stocks, curries, stews and soups the way you would a bay leaf, then remove before serving.

Crumble a leaf into a marinade for fish or chicken, or tuck one into a jar of sugar to gently perfume it over time.

Where It Came From

Grown spray-free in our Wairarapa orchard, ripened slowly on the tree and picked by hand. Even the fertilising is natural, our horses graze among the trees.

The Goodness

Like the fruit, yuzu leaves carry a good dose of vitamin C along with natural antibacterial compounds.

In Japan, they've long been steeped into tea as something to reach for when you want to feel a little more looked after, especially through the colder months.

How We Send It

Store in an airtight jar, away from direct light. Kept dry, they'll hold their fragrance for months.
