The Details
A handful of dehydrated yuzu peel, (minimum 100gsm) hand-prepared and slowly dried to hold onto its scent. The peel is where yuzu keeps most of its magic, intensely fragrant, sharp and floral and drying it concentrates that aroma into something a little goes a long way with. One ingredient, nothing added. Store in a cool, dry place and it'll keep for months.
Things to Do
Yuzu peel is a flavour-maker. Crush or grind it into a fragrant powder for seasoning, baking, salts and sugars; steep a piece in hot water for tea, or in cream and syrups for desserts and cocktails. Drop a little into rice, broths and marinades, or scatter over fish and greens. Rehydrate in warm water for a few minutes if you'd like it softer. Start small the fragrance is generous.
Where It Came From
Grown spray-free in our Wairarapa orchard, ripened slowly on the tree and picked by hand. Even the fertilising is natural — our horses graze among the trees.Grown on our family orchard in the Wairarapa, spray-free and picked by hand at their peak.
Our yuzu trees are the reason Good Hands exists, we planted them before most people here had heard of yuzu, drawn to a fruit the Japanese have prized for centuries. Even the fertilising is done the natural way: our horses graze among the trees, feeding the soil that feeds the fruit.
The Goodness
Simply yuzu peel, slowly dried, no added sugar, no sulphites, no preservatives. The peel is the part where citrus holds much of its natural oils and aromatic flavonoids, which is exactly why we keep it and dry it rather than letting it go to waste. One ingredient, nothing else.
